Danielle Fonseca is a civil and environmental engineer turned coffee producer. In 2016, she started managing the family’s Fazenda Da Serra with her father and is now running operations.
Da Serra occupies 40 hectares. Danielle’s focus has been top transition from conventional agricultural to a bio-dynamic and regenerative model. 38 hectares is exposed without shade as is the case with most farms in the region. Cover crops and mulch are utilized with the objective of keeping the soil covered to maintain moisture retention for the roots and to build up beneficial microbiota. On the remaining 2 hectares is an experimental Agroforest, where both coffee and food are grown and results can be applied on the farm and shared amongst other producers. According to Danielle, coffees that have been grown within the forest have shown improved cup qualities.
In addition, she is co-founder of Flowins, a comprehensive trading platform for coffee producers and buyers. It provides market access for producers as well as quality control and evaluation services. Buyers get access to a database that outlines extensive info on each producer. Traceability of all steps involved in post-harvest are available for all lots that are produced.
This lot consists of primarily Yellow Icatu, with a small amount of Mundo Novo variety. It was produced via Natural process, where the coffee was picked at peak ripeness and distributed in a thin layer to dry over the course of about 17 days, before being milled for export. The result: sweet and creamy in your cup.
