Geisha (or Gesha) is a highly prized and rare Coffea Arabica varietal,  renowned in the specialty coffee world for its unique flavor profile. Originating in Gori Gesha Ethiopia, it gained global fame after winning the “Best of Panama” competition in 2004 and consistently achieves record-breaking prices at auction due to its scarcity and exceptional quality.

COOPAGRY was founded by the Vivanco family, third-generation coffee farmers from Yapaz Bajo, a small town in Peru’s central jungle region of Junín. The area is characterized by lush vegetation, cloud-covered mountains, and rich biodiversity.
Located at about 1,400 meters elevation in the Palomar Valley, the area consists of thousands of small family farms, or chacras, typically 2–3 hectares in size. Farmers grow a range of crops—such as papaya, sugarcane, and bananas—but coffee is the most important and widespread, shaping both the local economy and landscape. Recognizing this significance, the Peruvian government designated the region a Coffee National Park in 2016.

This remarkable coffee is produced by Frank Vivanco, owner of Fundo Paraíso ( Paradise Farm). The farm sits at 1700 m and is the highest in Yapaz Bajo, under a canopy of shade trees,  providing excellent growing conditions for the 500 Geisha plants.

The coffee is carefully selected and fed through a de-pulping machine that removes most of the fruit.  From here the coffee undergoes anaerobic fermentation. This method,  borrowed from the wine industry,  involves placing the pulped coffee in sealed drums for 100 hours.  The lack of oxygen shifts the microbial ecosystem, favouring anaerobic bacteria and yeasts. These microorganisms break down the sugars and compounds in the coffee fruit to release rich byproducts, including alcohols, esters, and acids, that are absorbed by the beans. The coffee is then dried on raised beds in solar greenhouses.
